8 The Glenville Democrat/ Pathfinder ,qeptemher 30. 1076 MUSHROOMS AND BROWN RICE COMBINE ELEGANTLY Even though mushrooms areserved more and more fre- quently at family meals, they are still the symbol of best- food-forward when guests are expected. Mushrooms, oranges, raisins arid almonds join brown rice deliciously. MUSHROOM RICE A L'ORANGE 1 pound fresh mushrooms or 2 cans (6 to 8 oz. each ) sliced mushrooms 6 tablespoons butter or margarine, divided 1 cup brown rice 3/4 cup chopped onions 3 chicken bouillon cubes 3-1/2 cup6 boiling water 1/2 cup orange juice 1/3 cup dark raisins 314 teaspoon marjoram leaves, crumbled 1/2 teaspoon salt 1/8 teaspoon ground black pepper 1/3 cup toasted slivered almonds Rinse, pat dry and alice fresh mushrooms (makes about 5 cups) or drain canned mushrooms; set aside. In a large skillet melt 4 tablespoons of the butter. Add mushrooms; saute for 5 minutes, remove and set aside. In same skillet melt remaining 2 tablespoons butter. Add rice and onions; cook and stir until brown, about 5 minutes. Dissolve bouil- ' Ion cubes in boiling water. Stir into skillet along with orange juice, raisins, marjoram, salt, and black pepper. Bring to the boiling point. Reduce heat and simmer, cov- ered, until rice is tender, about 1 hour and 20 minutes. Stir in reserved sauteed mushrooms. Reheat and serve gar- nished with tOasted almonds and orange sections, if desired. Yield: 6 portions. Q - How is graduate training time determined? A - This is determined by the school.
